What is maple syrup?
Pure maple syrup is concentrated maple sap used for flavor and sweetness in glazes, cakes, sauces, and breakfast foods. Its dissolved sugars also contribute moisture and browning, so replacing it with a dry sweetener changes more than sweetness.
This record applies to pure maple syrup at roughly room temperature, not pancake syrup or maple cream. Refrigerate it after opening, and let the liquid settle before reading the line; 1 US cup is about 315 grams.
